The Verge forum user Shtekeris shows how to remove all the skeuomorphic elements from Mountain Lion to make it look like the computer UIs of yore.
If I wasn't so lazy, I'd add this to OmniFocus — and push it off for days. I guess I've just settled with linen and leather.
